For centuries the Chouara has turned skins into the soft leather sold throughout the medina. From the terraces of the surrounding shops you look down on a honeycomb of stone vats filled with lime and natural dyes, where workers tread and rinse hides by hand. The smell is strong, and shopkeepers often hand visitors a sprig of mint to hold.
Best time to go: Go in the morning, when the dye pits are busiest, and view them from one of the leather shops' terraces.
